White Paper: Artificial Intelligence for Food and Health

AIFS, together with the UC Davis Innovation Institute for Food and Health (IIFH) and the Periodic Table of Food Initiative (PTFI), has released the white paper, Artificial Intelligence for Food and Health.

The need for more healthy, sustainable, and equitable food systems is urgent. We must meet the challenge of feeding a growing population while supporting the health of a planet facing shifting weather patterns and increasing resource demands.

With strides made in the fields of Artificial Intelligence (AI) and Machine Learning (ML) and wider accessibility to datasets in the domains of health, nutrition, and agroecology, AI is poised to become a critical tool spurring the next wave of technological innovations in food production.

It is becoming increasingly evident that AI and ML will play an indispensable role in critical areas from molecular breeding, agricultural production, and harvesting to nutrition, food processing, and waste-reduction.

This white paper gives a synopsis on the evolution of AI and the current progress in which it is deployed in the areas of agriculture, food, and health towards the creation of more efficient, equitable, and sustainable food systems.

Topics include AI in agriculture, innovation in food for health, enhancement of quality control & food safety, the FSMA mandate, the dark matter of food, computer vision to aid dietary goals, AI to guide new product development in plant-based food products, and AI in personalized health and nutrition.
