AI-Enabled Models for Food Digestion and Nutrient Delivery

Description
The food digestion process is vital for the release of micronutrients and the breakdown of macromolecules for nutrition and health. Despite the significance of digestion processes for health, predictive models are lacking, which as a public health issue, limits innovation in food industries, and is one of the key barriers to personalization of nutrition. This project aims to address the lack of predictive models to make a difference in this space. The long-term impact will be to develop AI technologies to advance food manufacturing, including customization of nutrition, and develop digital twin models of gut and food digestion.
